Simtokha Dzong is also known as the 'Palace of the Profound Meaning of Secret Mantras'. Built in 1629, it is known to be the oldest surviving fort/monastery and the first dzong to be built in the unified Bhutan. It currently houses the Dzongkha language learning institutes - "The Institute for Language and Culture Studies". There are beautiful frescoes and slate carvings in Simtokha.
